Ingredients
- 350 g Cottage cheese not too dry, not too wet
- 2 Eggs
- 6 tbsp Wheat flour plus extra for rolling
- 2 tbsp Sugar
- 5 tbsp Sunflower oil for frying
Instructions
- Mash the cottage cheese with a fork until no coarse lumps remain. Beat in the eggs and add the sugar, mixing well.
- Add the flour and mix well. Add a little more flour for thicker cheesecakes, or slightly less for softer ones. You should end up with a smooth, workable mixture.
- Heat a frying pan over medium heat and add the sunflower oil.
- Dust a plate with flour. Shape 4-5 small balls from the mixture, roll each in flour, flatten into a small round and place in the pan.
- Fry for 1-2 minutes until golden brown on the underside, then flip and fry the other side.
- Repeat until all the mixture is used. Serve warm with saffron-infused honey.
